Summer is here, its scorching all of us and it will stay for two long months!

Every year people await and dread Summer in India, because Indian summer is no ordinary summer: it packs a deadly heat and ensures half of us remain shut in our cool homes. Of course it isn't as destructive as it appears. Summer is also the time for vacations, travelling, beaches, late night drives, sunkissed-selfies, meeting your friends in ice-cream parlours or well, it could be none of those. Either way, one constant is Food. Whether you're holed up in your home or hangout with your relatives or planning something new - the common necessity is food and eating and cooking.

Which is why the following consists of some of the best and easiest recipes to have in Summer.

1. Sol Kadi (Konkani Kokum Drink)

Sol Kadi is made from Kokum or Aamsol and coconut milk. It cools down the digestive system after eating spicy food. It is a natural digestive, and supposed to be an excellent antidote for acidity.

2. Papaya and Soybean Salad

This colorful combination of papaya and edamame is cool and refreshing, yet hearty and filling — perfect for Indian Summer.

3. Mango Ginger Lassi

Summer = Mango. This Mango Ginger Lassi is refreshing, cool, and so delicious! It even has fresh ginger root added which gives this lassi a little spice!

7. Dahi Boondi

Since ages, this dish has been a classic dish of the Punjabi cuisine. In this dish, the savory or spicy boondi (puffed chickpea balls) are added with cold curd. Onion is a tasty coolant and Onion Salsa with lime is coming throughout the rest of Spring and beginning of Summer. You would want to attempt Onion Salsa or carmelized onions for your veggie pies.
